It’s savory, simple, and will definitely warm you up! This soup is a healthy low carb substitute for potato soup that you don’t want to miss.

Ingredients:

  • 1 head cauliflower
  • 1 small onion
  • 3-4 cloves of garlic
  • 1 leak
  • 4 1/2 cups water or vegetable stock
  • 3 tbsp. minced chives

Directions:

  • Prepare the cauliflower; rinse and then cut leaves, stem off
  • Roughly chop the cauliflower florets and the core
  • Add olive oil to a 4 1/2 qt. pot and add in onion, garlic, and leeks
  • Sauté all these ingredients for 7 mins or until onions and leeks are softened
  • Add in cauliflower and garlic; cook until garlic is fragrant.
  • Add the 4 1/2 cups of water or vegetable stock
  • Add salt to taste
  • Reduce heat to medium and let simmer for 30 mins
  • Remove from heat and use an immersion blender to blend until smooth and creamy
  • Serve warm with desired garnish (chives, croutons, cheese, basil)
